Our Mezzi Rigatoni is a shorter tube shaped pasta made from Senatore Cappelli, a heritage wheat prized for its naturally rich flavor and high fiber content. We mill it semi-whole to preserve the grain's character, then dry it slowly for over 30 hours.

The ridged tubes are built for heartier meals because they hold a firm al dente bite that doesn't go soft. Think ragù, pasta al forno, and roasted vegetables. The wheat's gentle nutty notes let savory sauces shine. It’s also easier to digest than standard wheat.
