Parmigiano Reggiano PDO is one of the most strictly protected food designations in Europe, produced exclusively in a defined region of Italy from unpasteurized milk and aged a minimum of 12 months. Its flavor is concentrated, almost crystalline, with umami depth that holds up to the richness of a butter-based dough without disappearing into it. Black pepper, used properly rather than sparingly, adds warmth and sharpness that elevates the whole thing from snack to something worth serving deliberately.
